Market Minute: Portobello mushrooms, the other steak on the grill
Portobello mushrooms are the fully mature Cremini mushrooms that can grow up to six inches in diameter. This mushroom is known for its dense, meaty steak-like texture. During summer, outdoor grilling is a prime time for the Portobello veggie burger.
Today’s shoppers are spending more each year on premium brown mushrooms. The Portobello is a perfect produce item for grilling by brushing the caps with olive oil, balsamic vinegar and garlic. They will turn up nicely charred and juicy by grilling them on a medium-high heat for just five to seven minutes per side.
Also place pre-sliced Portobellos alongside the caps on the grill. Younger shoppers favor the slices and will purchase them to grill at home or on camping trips. Both caps and slices will go great together with buns, sliced onions and peppers on those grills.
For best merchandising and to build up the Portobello mushroom category, try placing them on a bulk wing display alongside an end cap. The Portobello is strong and will sell faster when they are out in the open on a secondary display.
Packaged Portobello mushrooms are one of the best choices that customers will buy. Both whole and sliced Portobellos in tray wrapped packages are ideal for the secondary display. Have plenty displayed for some big sales opportunities — and make sure to post signs that describe the benefits of Portobello mushrooms for the summer grilling season.
